As a Foodservice operator in the State of Illinois and the City of Chicago, you should have a Certified Manager or Supervisor "at all times food is being handled".

  • They should have a valid State of Illinois Department of Health Sanitation Certificate under the section 750.540 & 750.10 for the State of Illinois.

  • Additionally, the City of Chicago Certificate (Municipal Code Chapter 130) must be valid at the time of inspection and a certified manager must be present on the premises.

  • Inspectors will ask to speak with the Certified Manager before they begin their inspection.
